Peppermint Coconut Snowballs
Ingredients
- 1 cup shredded unsweetened coconut
- 1/4 cup coconut oil melted
- 2 tablespoons maple syrup or agave syrup
- 1/2 teaspoon pure peppermint extract
- A pinch of salt
- Crushed candy canes or additional shredded coconut for rolling optional
Instructions
- In a mixing bowl, combine the shredded unsweetened coconut, melted coconut oil, maple syrup (or agave syrup), peppermint extract, and a pinch of salt. Mix until well combined.
- Place the mixture in the refrigerator for about 10-15 minutes to firm up slightly for easier rolling.
- After chilling, take a tablespoon of the mixture and roll it into a ball using your hands. Repeat with the remaining mixture.
