Lemon Arugula Avocado Toast

A Lemon Arugula Avocado Toast fit for any millennial, thoughtfully crafted with PCOS in mind.

Ingredients
  

  • 1 Slice bread
  • 1/2 avocado
  • 1 cup arugula
  • 1 large egg
  • 1/2 tsp lemon juice
  • salt and pepper to taste

Instructions
 

  • Over medium-high heat, warm up a nonstick pan using a light coating of oil spray if needed.
  • Crack the egg into the pan once the surface area is warm, scrambling the egg in the pan and cooking too desired texture.
  • While the eggs are cooking you can add toast to the toaster. Toast the bread to your desired level of crispiness.
  • While the bread is toasting, cut the avocado in half and remove the pit. Scoop out the avocado flesh and place it in a small bowl.
  • Add the lemon juice, arugula, salt, and pepper to the bowl and mash everything together with a fork until you reach your desired consistency.
  • Place the avocado mixture on top of the toasted bread.
  • Top wit the scrambled egg.
  • Add any desired toppings on top such as red pepper flake, lemon juice, hot sauce, or your favorite herbs and spices.
  • Serve and enjoy!

Notes

Optional: Top with red pepper flakes for some added spice, or your favorite herbs and spices to boost the flavor.
